Description
The Champagne is a luminous, flowing pale yellow gold with deep pale yellow highlights. It is enlivened by fine, lively bubbles that feed a persistent collar. The visual impression is of a rich, fresh wine.
The first nose evokes scents of marmalade, greengage, wild strawberry, iodine and pineapple. Aeration of the Champagne reveals notes of Carensac licorice, damp chalk stone, quince, orange blossom, pomelo, apricot, mango, blackberry, cranberry.
The approach on the palate is supple and fresh, with creamy, mellow effervescence. The Champagne develops an enveloping, pulpy fruitiness, underlined by orange and pomelo acidity. The mid-palate is orchestrated around a chalky minerality that confers salinity, openness and an intense tactile sensation on the tongue. The whole expresses a certain greediness, while allowing the mineral richness to carry through to a sapid finish, sparkling with exotic freshness.
