The Champagne displays a luminous and fluid pale yellow-gold coulour, with pale yellow highlights and a lively steam of refined bubbles. It suggests both richness and freshness.
First nose opens up with notes of marmalade, green plum, wild strawberry, iodine, pineapple. When aerated Champagne evolves towards notes of liquorice, wet chalk, orange blossom, pomelo, apricot, mango, blackberry, cranberries.
The approach in the palate is supple and fresh with creamy and melted effervescence. The Champagne develops pulpy and coated matter well sustained by a fresh acidity reminding those of orange and pomelo. The middle mouth is orchestrated by chalky minerality that provides saltiness, frankness and an intense feel of chalk powder on the tongue. The whole expresses some greediness well balanced by savoury finish and exotic freshness.
