The Champagne displays a fluid and luminous pale green-yellow colour, with silvery-yellow highlights. It is crossed by fine and vivid bubbles providing for a delicate collar. The visual sensation indicates both richness and full of nuances.
The first nose evokes mineral purity of fine and rocky chalk, mixed with almond and candied lemon smells. When aerated it reveals charming fragrances of acacia, mimosa and verbena, joined by greedy notes of brioche, white peach, apple, crushed pear, raspberry, with touches of nutmeg and chives.
The approach in the palate is frank and fresh with a creamy and melted effervescence. The Champagne develops pulpy matter sustained by a fine acidity reminding those of lemon. The middle mouth is orchestrated by a pure chalk minerality that releases iodine sea spray and providing frankness, saltiness, and a good length to the palate. The good dosage strengthens balance of very ripe fruit in a special vintage with pure mineral reading. The finish is concentrated and savoury, with saltiness and umami taste, like a sensory and tangible testimony of sea influence of our terroir.
